Flaked maize has no enzymes of its own which it can use for conversion so simply add it to your mash vessel with other malted grains to allow conversion of the starch. Flaked maize is ideal to be added straight to the mash tun for use in American pilsners and cream ales to lighten the colour and body. Flaked maize
