(La Altea) in Highlands Los Altos, Arandas. It is cooked in Stone Brick Ovens and crushed using a Tahona, Roller Mill. The type of fermentation is Open air fermentation, and the spirit is distilled in Pot Still. Bottled at NOM #1139 with 100% agave, it is released at 40% abv (80 proof).
