We make skinsy gris very much similarly to Pinot noir: its destemmed whole berries fermented in flowerpot for around three weeks, before pressing to very old puncheons for maturation. We do however pick at white wine ripeness to conserve acidity. Its on lees for ten months before a light sulfuring pre bottling. This is one of our favourite
